 Start 2018 out with a bang, and throw in some good luck!  Here are our top five foods to boost your luck and health...

1. Greens - fill up on all greens, from cabbage to kale.  They resemble money!

2. Soba Noodles - slurp to a long life, and don't break the noodles!

3. Beans - think of them as coins! 

4. Sauerkraut - invite in the money... sauerkraut and cabbage attract wealth.

5. Pork - symbolizes prosperity and progress.

Good Luck Noodle Soup
Serves two. 248 Calories per Serving 

4 oz grilled, sliced pork chop
1 cup soba noodles
1/2 cup white beans
2 cup ribboned kale
1 sliced shallot
2 tsp grated ginger
2 cloves minced garlic
2 Tbsps sauerkraut
1 sliced jalapeno
1 lemongrass stalk
1/4 lime juice
4 cups broth
1 tbsp avocado oil
Salt and pepper
Cilantro and sesame seeds

Season pork chop with salt and pepper, then grill until cooked rare.  Let rest, then slice into thin strips.   In a large pot, add avocado oil and once heated, add shallots, garlic, ginger, sauerkraut and jalapeño.  Sauté until fragrant, then add beans and kale.  Pour in broth, lime juice and lemongrass, then simmer on medium heat for about 15 minutes.  Cook soba noodles according to package.  Add pork and noodles to soup, then salt and pepper to taste.  Cook for an additional 5 minutes.   Serve and garnish with coarsely chopped cilantro and sesame seeds.  Enjoy the good luck in the new year!
